"Gondo Factory is one of the most famous wet mill in the New Kiriti Farmers Cooperative Society. Timely and selective hand picking is carried out in Gondo wet mill of New Kiriti FCS . Cherry is delivered to the wet mill the same day it is picked. Cherry sorting is carried out at the wet mill prior to the pulping. Red ripe cherries are separated from underipes, overipes and foreign matter. The red ripe cherries are processed through the wet processing method that utilizes clean water from Kananahu stream. The processing water is recirculated before disposal into evaporation and seepage pits. Sun drying is done after careful fermentation and washing before delivery of the parchment coffee to the dry mill for secondary processing.
There are 528 farmers who supply cherry to the Gondo factory. These are very small scale farmers who on average have only 0.25 hectares of coffee - and only about 50 trees per farm!
Selective hand picking of red ripe cherrie is practiced by farmers of Gondo wet mill, New Kiriti FCS Ltd. The so harvested cherries are delivered for pulping at the wet mill the same day. After pulping, the pulped beans are fermented for mucilage removal for 16-18 hours thereafter the beans are washed and graded. The parchment is then dried under the sun to a moisture content of 10.5 -11.5%. Rainfall is heavy with 1,200 -1,400 mm per year. The rains are in two seasons, short and long rains. Main crop depends on long rains that come between April to June. Light crop receives adequate rain between October – November."
